The main benefit of using a Fixed IP SIM Card, particularly one with a public IP address in your 4G or 5G router, is the fact that you can directly connect to your router from the Internet.  You do not need to create a VPN between your laptop, PC, office network etc to the SIM providers network in order to communicate with your router and connected devices on their private  fixed IP address.

Your router would normally have a built-in firewall to provide the security for your publicly available device, just like your office or home broadband with a fixed, public IP address would use the firewall of your wired broadband router.
